Codorníu is one of the oldest wineries in the world and second-largest producer of Cava (Spanish sparkling wine)
The History of this prominent family business goes back to the XVI century. Since 1976, the Codorníu cellars at Sant Sadurní d’Anoia are a National Monument of Historical and Artistic Interest.
There are plenty reasons for not drinking alcohol and a large number of people who prefer non-alcoholic beverages. Luckily, there is alcohol-free wine that provides the perfect solution to the equation.
Preparation Technique
Non-alcoholic wine undergoes the same production process as regular wine: fermentation, barrel-aging with one additional final step – alcohol extraction. It is done through the process of vacuum distillation.
In vacuum distillation the wine is placed under vacuum and gently heated to evaporate the alcohol. Under vacuum the wine boils off at a relatively low temperature (25°C-30°C) which prevents flavor changes.
The result of such process is “wine” with an ABV no higher than 0.5 percent.
